Shredded Carrot & Chickpea Salad

This summer salad is easy to whip up and supports blood sugar balance, a happy gut, and healthy hormones.

Ingredient profiles:

Organic Chickpeas - good source of fibre and protein (always buy organic chickpeas as they are one of the most heavily sprayed beans with the dangerous pesticide glyphosate)

Carrot - good source of fibre, may help bind up extra estrogen in the body by keeping stool moving

Green Onion - anti-inflammatory properties

Olive Oil - anti-inflammatory properties

Apple Cider Vinegar - promotes healthy gut, aids digestion, helps with blood sugar balance

INGREDIENTS:

1 can organic chickpeas

1 carrot shredded

2 green onions sliced

2 Tbsp olive oil

1 Tbsp apple cider vinegar

pinch of garlic powder

pinch of sea salt

pinch of pepper

DIRECTIONS:

  1. Drain your can of chickpeas and rinse them. Add them to a medium sized bowl.

  2. Add to the bowl shredded carrot, 2 green onions sliced, olive oil, apple cider vinegar, garlic powder, sea salt and pepper. Mix until combined.

  3. Store in fridge and enjoy!
