Mediterranean Ground Beef & Vegetable Stir Fry
I posted this sitr fry as I was making it for dinner earlier this week and got SO MANY MESSAGES asking for the recipe. So I thought I’d give it a permanent place here.
This stir fry takes 30 minutes to make and packs with it 8g of fibre and 25g of protein in each serving. Helping us hit our daily requirement of fibre (25-30g a day) and our goal for 20-30g of protein per meal!
Feel free to swap the veggies for what you have on hand. Optional add-ins could be kalamta oilves, spinach, broccoli and/or tomatoes!
INGREDIENTS:
1lbs lean ground beef (organic grass fed if possible, this increases the amount of protein and reduces exposure to environmental toxins/hormone disruptors)
1 zucchini, chopped
1 bell pepper, chopped
1 sweet potato, peeled and chopped
1/2 large red onion, diced
2 Tbsp avocado oil
1/2 tsp garlic powder OR 1 clove garlic minced
1 Tbsp oregano
1/2 tsp paprika
Salt & pepper to taste
1/2 cup of water/beef broth
1 1/2 cups of quinoa cooked according to package directions
1/2 cucumber
1/2 cup feta cheese crumbled
Hummus
DIRECTIONS:
Brown the ground beef. Add in your chopped veggies, spices and avocado oil and saute for 5-7 minutes.
While that is sauteing, cook your quinoa according to package directions.
Add 1/2 cup of water to the veggies and beef to help the potatoes soften. Cover & cook until they are soft (about another 10 minutes or so).
Dice up cucumber and crumble feta.
Once quinoa and stir fry are cooked, build your bowls by putting in the quinoa first, then stir fry, diced cucumber, sprinkle on some feta and add 2 tbsp of hummus.
