Anti-inflammatory Ginger Chicken & Veggie Soup
This is one of my GO-TO’s for meal prepping or making a meal to give a postpartum momma or someone who is healing from a surgery. It is so nutrient dense and the turmeric and ginger make it great for reducing inflammation. The collagen from the chicken thighs also helps with skin repair and health, as well as supporting the healing of the lining of your gut.
This recipe makes a big batch with enough for you and your freezer (or to give to someone else!).
INGREDIENTS:
2 lbs chicken thighs (bone-in, skin-on)
8 cups chicken bone broth
1 large yellow onion, diced
3 cloves of garlic, minced
2-inch ginger, peeled and chopped small
1 tsp turmeric powder
3 large carrots, sliced
2 stalks of celery, chopped
1 cup cauliflower, chopped
1 cup zucchini, chopped
Juice of 1/2 lemon
2 tbsp coconut oil or ghee or grass fed butter
Fresh parsley or cilantro (for garnish)
Sea salt & pepper to taste
DIRECTIONS
1. Sauté the onion, garlic, ginger, turmeric in the coconut oil (or ghee or butter) for 3-4 minutes.
2. Add chicken and broth, bring to a boil, reduce to simmer and let simmer for 45-60 minutes.
3. Remove chicken, shred chicken, and discard bones/skin
4. Return chicken to the pot and add your veggies. Simmer for 15 minutes.
5. Stir in lemon juice and salt & pepper to taste.
6. Serve with fresh herbs on top. Leftover portions allow to cool and then store in freezer in serving size portions to eat during postpartum.
*You can use mason jars to freeze your soup, just make sure when using glass containers that the soup is fully cooled and that you leave 1-2 inches of room from the top as the liquid will expand when frozen.
