Quick and Easy Sheet Pan Chicken, Veggies & Feta

Sheet pan meals are one of my FAVOURITE things to make. I can pack them full with protein and veggies and they take low prep and low fuss as they just do their own thing in the oven!

Here is one of my go to recipes, and the veggies can easily be switched around for whatever I have on hand.

INGREDIENTS:

1 zucchini

10-12 mini potatoes OR 3 regular potatoes

1 cup grape tomatoes

4-6 chicken thighs (as many as your family needs!)

1/4 cup melted butter

1/2 lemon juiced

2 tbsp chopped parsley OR 1 tbsp of dried parsley (oregano or rosemary would work well too!)

salt + pepper to season

1/2 cup feta

DIRECTIONS:

Preheat oven to 375F.

Take out a large baking sheet. Chop up your veggies and add them onto the sheet.

Slice up your chicken by scoring it in a criss-cross pattern so that it cooks faster and gets all the seasoning goodness in it. Then tuck it in between the veggies on the sheet pan.

Mix melted butter, lemon juice, salt, pepper, and chosen herb together. Drizzle over the chicken and veggies.

Crumble the feta and sprinkle on top.

Pop in the oven for 30-40 minutes (cooking time will depend on how thick your chicken is).
