Italian Sausage & Roasted Root Veggies Sheet Pan Dinner

The perfect meal for those busy nights! And the spices from the italian sausage pair so well with the warm root veggies in this dish.

INGREDIENTS:

4-5 italian sausages sliced

2 zucchinis slices

3 beets sliced and quartered

15-20 brussels sprouts halved

2 sweet potatoes sliced and quartered

1/2 tsp salt

1 tsp thyme

1/2 tsp garlic powder

Avocado oil for drizzling

DIRECTIONS:

  1. Take out a large sheet pan and place all your cut up veggies on the pan. Place the sliced sausage on top of the veggies.

  2. Drizzle a generous amount of avocado oil on the food, and then sprinkle salt, thyme, and garlic powder over everything.

  3. Cook at 400F for 30-40 minutes, checking for the sweet potato and beet to become soft and the sausage to be cooked through.

  4. Enjoy on it’s own or with a side salad or over a bed of brown rice or with some buttered sourdough bread!

NOTES:

This meal could easily be prepped the morning of or the day before and left in the fridge, then just pop in the oven for dinner that evening!

You can subsitute carrots in for the brussels sprouts if you aren’t a fan of them. Other veggies that would pair well are turnip, red potatoes, broccoli and red onion!
