Breakfast Berry Crumble
I recently saw someone make a similar recipe to this in a tik tok video, but unfortunately I could not find the recipe ANYWHERE. So I took it as inspiration to improvise a new recipe and “ta da” the Breakfast Berry Crumble was born. And let me tell you, I think this is one of my new favourite breakfast recipes. Why?
It’s easy to make (you make the crumble in a food processor and use pre-frozen berries).
It makes enough for at least 4 breakfasts.
It contains fibre, fat and protein to keep your energy sustained.
And it is SO yummy.
INGREDIENTS:
1 1/2 cup rolled oats
1/4 cup pumpkin seeds
1/4 cup natural peanut butter
1/4 cup maple syrup + 1 tbsp maple syrup divided
2 cups mixed frozen berries
1 tbsp chia seeds
*optional: when serving, top it with a good sized dollop of vanilla greek yogurt
DIRECTIONS:
Preheat oven to 350F.
Add rolled oats, pumpkin seeds, peanut butter, and 1/4 cup maple syrup to the food processor and pulse until combined. The pumpkin seeds may still be whole and that is okay, you just want it to be a crumble consistency.
Take out a 8 x 8” glass baking dish. Add your frozen berries, chia seeds and 1 tbsp of maple syrup to the dish and mix together.
Pour crumble mixture onto the berry mixture in your baking dish. Spread it as evenly as you can. It is okay if there are some empty spaces.
Bake for 30 minutes or until the crumble is slightly browned and toasted.
Enjoy some right away with a dollop of greek yogurt and store the rest of the crumble in the fridge and take out portions to reheat as desired.
